Egg Salad & Cucumber Sandwiches Recipe
Ingredients
1. 1/2 cup chopped red onion
2. 1/2 cup mayonnaise
3. 1/4 cup sour cream
4. 2 tablespoons Dijon mustard
5. 1/2 teaspoon pepper
6. 1/4 teaspoon salt
7. 8 hard-cooked eggs, chopped
8. 1 large cucumber, sliced
9. 1 tablespoon dill weed (Sathakuppa)
10. 12 slices sourdough bread, toasted
Preparation:
In a small bowl combine the first six ingredients. Add eggs ; stir gently to combine.In another bowl toss cucumber and dill. Spread egg salad over six slices of toast; top with cucumber and and remaining toast.
Serve it as snacks for children
