Ingredients
1. Indian Dates : 15 nos.
2. Grated Papaya : 3/4 cup(not so ripe)
3. Grated Carrot : 3/4 cup
4. Grated Pumpkin : 3/4 cup
5. Oats : 3/4 cup
6. Coconut Milk 1st milk : 11/2 cup
Coconut milk 2nd milk : 3 cup (Take 2 coconuts and grate it for taking milk)
7. Jaggery : 1 big ball size
(smash it and convert it into liquid by adding 2 cup water and filter it)
8. Chopped Cashew nuts : 6 nos. for garnishing
9. Chpped dates : 5 nos.
10. Ghee : 4 tablespoon
11. Warm cowmilk : 1/2 cup
12. Cardamom powder : 1/4 teaspoon
13. Pomegranate : 1 no. (For garnishing, not necessary)
Preparation
Remove the seeds and soak dates in 1/2 cup warm milk for 15 minutes, set aside. Meanwhile chop the nuts and dates. Heat 1 tspn ghee in a pan, fry chpped nuts and dates till crispy. Keep it aside. Grate carrots, pumpkin and papaya(use blades with small holes).
Heat again 11/2 tspn ghee and fry the grated carrots, papaya and pumpkin until the raw smell goes. Add 11/2 cup jaggery liquid to the fried ingredients and cook for 2 or 3 minutes by stirring it continuously.
Transfer soaked dates to a mixer, add little milk used for soaking and grind it into a semifine paste. Add the semifine paste, oats and 2nd coconut milk to the payasam mix andcook for few minutes until it reduces little and becomes slightly thick. Add cardamom powder to the payasam. Stir well. Then add 1st coconut milk and mix well. Add jaggery liquid if needed. Turn off the gas and garnish with fried nuts, dates and pomegranate fruit.
Yummy mixed fruit - veg Payasam with Oats is ready. Serve it hot or cold.
