Pineapple Madhura Pachadi
Ingredients
1. Pineapple pieces - 1 cup
2. Tamarind - lemon-size
3. Jaggery - 1 small piece
4. Coconut (grated) - ½ cup
5. Chilli powder - ½ tsp
6. Green chillies (chopped) - 1 tsp
7. Curry leaves
8. Mustard seeds - 1 tsp
9. Red chilli - 3 no.
10. Coconut Oil - 3 tsp
11. Salt - to taste

Method of preparation
Put pineapple pieces in a cooking vessel. Add tamarind to water and boil it. Put chilli powder and salt. Stir well. Now pour some water. Cover the vessel and cook for about two minutes.

Remove the lid and stir the contents well. Now add the paste made from grated coconut and green chillies to the cooked pineapple pieces. Add small pieces of jaggery and mix well.
Now prepare the seasoning. Heat some oil in a pan. Put red chillies, mustard seeds and curry leaves. When the seasoning is ready, transfer this to the vessel containing the pachadi.
