Nadan Chicken Coconut Curry

Indian Chicken coconut curry recipe

Ingredients:-

Chicken pieces - 1/2 kg
Big onion - 3 Nos. Medium size ( cut into thin long pieces)
Ginger - 1 small piece, Garlic - 5 cloves, Green chilly - 3 or 4 Nos. (paste it)
Tomato - 1 no. (Cut into cube pieces)
Turmeric powder - 1/2 tsp
Cumin powder - 1 tsp
Coriander powder - 1 tsp
Red chilly powder - 1/2 tsp
Garam masala - 1/2 tsp
Water - 11/2 cup
Coconut oil - 4 tsp
Coconut milk - 1 cup
Curry leaves - few leaves
Coriander leaves - few to garnish
Preparation:-

1. On medium flame, heat oil into a pan. Add onions and fry until golden brown.


2. Add ginger, garlic, curry leaves and green chillies and stir fry for one minute. Add turmeric powder, cumin powder, coriander , garam masala and red chilli powder, stir and fry for about 30 seconds.


3. Now add tomato and fry for 2 minutes. Bring the chicken pieces into the pan, add salt and mix well. Let it cook for 5 minutes, stirring occasionally.


4. Add 1/2 – 1 cup of water, cover the pan and let it cook for 20-25 minutes.
Lower the flame and add thick coconut milk or coconut cream. Simmer for 10 minutes.
Note: if the sauce is watery, remove the lid then increase the temperature and cook for few minutes more to reduce the unwanted liquid.



5. Garnish with fresh coriander leaves and serve warm with rice or bread or Appam
