Brinjal vattichathu

Ingredients:

1. Brinjal : 1/4 kg.
2. Big onion : 1 no.
3. Green chillies : 4 or 5 no's.
4. Coconut oil : 1 tablespoon
5. Salt : required quantity.

Preparation:

Take brinjal and clean it. Then slice it into small square pieces. Add cutted pieces of onion, green chillies, 2 glass water and salt and cook well. After the quantity of water decreases, add coconut oil and stir it well. Add salt if necessary and turn off the gas. Brinjal vattichathu is ready to eat with rice.
